The Czar's Chipotle Potato Salad!

It's SUMMER!  With the temps in the 90's for at least a few weeks here in the Pacific NW, we figured we'd do our own take on the beloved summer-time dish....POTATO SALAD!  It's cool.  It's hip.  It's...potato-y.  Not to mention, that it tastes better after sitting in the fridge for a couple of days.

One drawback to potato salad is the mayonnaise-going-bad-in-the-sun factor.  Sure the dish is tasty, but if you give all of your guests food poisoning it will put a bit of damper on the party.  This recipe, however, is mayo-free and pretty darn tasty!  Set it out and worry not.  Enjoy!

  • 3 lbs. diced, cooked potatoes
  • 1 bunch cilantro, chopped
  • 1 c. diced red bell pepper
  • 1 onion, chopped
  • 1/2 c. vinegar
  • 1/4 c. lime juice
  • 1/3 c. olive oil
  • 3 T. honey
  • 1-2 cloves garlic, minced
  • 2 t. spicey brown mustard
  • 2 t. ground cumin
  • 1 1/2 t. salt
  • 1/4 c. The Czar's Pinot & Chipotle Sauce


Combine in large bowl and refrigerate.  Enjoy!
